Red Velvet Cupcakes with Cream Cheese Toppings

 
Hi! I am finally putting my hands together for baking again. I’m baking red velvet cupcakes this time. By the way, the picture above is a picture taken when I was enjoying the red velvet cupcakes that was bought by my colleague. I really like the taste of the mild cocoa flavour in it and the “red” coloured cake texture that is so attractive to me. Therefore I decided to try baking these red velvet cupcakes myself.


I took the recipe from a few websites and try adjusting some ingredient according to my favour and have some minor changes in it. This is a picture of my after all work.

And yes, I did place a Chef Monchhichi for my photography session later. Hope is not really that distracting. LOL!! Anyway I am glad that the result came out to be perfect as the red is still red, the cocoa flavour can be taste in the cake and the cream cheese topping doesn't turn out to be watery. I am giving myself a grade “A” job done. ;p


Aaahaa!! Before I started with the bakery, I went for a shopping at the grocery and these were what I bought for the bakery session.

By the way, I bought this 1/3 less fat Cream Philadephia Cheese for the toppings.

Do you all trust that it is really less fat? I am just trying to make myself feel better that I am not taking in a full fatty cream cheese into my stomach so I decided to take this 1/3 less fat cream cheese. By right they have one with fat free but I don't really believe that it’s really “fat free” so just took the 1/3 less fat rather than the original one. If you have difficulties in choosing, just to let you know that all three are the same price. LOL!

Red Velvet Cupcakes:
130g plain flour, to be sifted
1/4 teaspoon baking powder
1/4 teaspoon salt
15g cocoa powder, to be sifted
57g unsalted butter, at room temperature
150g castor sugar
1 large egg
1/2 teaspoon pure vanilla extract
120 ml buttermilk
1 tablespoon red food coloring
1/2 teaspoon white distilled vinegar
1/2 teaspoon baking soda

Cream Cheese Frosting:
113g cream cheese, room temperature
1 tablespoon pure vanilla extract
150g icing sugar
113g cream cheese

Method:-
1) Preheat oven to 180 degrees C and line 16 paper cupcake liners.

2) In a large bowl sift together the plain flour, baking powder, salt and cocoa powder.

3) In the bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the egg and beat until incorporated. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined.

4) In a measuring cup whisk the buttermilk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and buttermilk to the butter mixture, in three additions, beginning and ending with the flour.

5) In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.

6) Working quickly, divide the batter evenly among the 16 paper cupcake cups and smooth the tops with an offset spatula or the back of a spoon. Bake in the preheated oven for approximately 20 - 23 minutes, or until a toothpick inserted in the center of the cupcakes comes out clean.

7) Cool the cakes in their pans on a wire rack for 10 minutes and them remove from pan. Let cool completely before frosting.

Polka Dot Nail Art Design


Hi! It’s a week more to my birthday and I decided to give it a “GO” to my nails. This is my first time ever trying on polka dot nail art design and this first experience really didn’t give me any disappointment. It’s just AWESOME!!! TAADAA~~


What you guys think? Is it awesome? LOL~ I will take it as a “YES” cause I’m damn super loving my nails now. ;p By the way, I think it looks like Minnie Mouse dress.

Or Super Mario Mushroom??
LOL!!! I think it looks more like Minnie dress because whenever my friends ask me to show them my nails, I will automatically say it as my “Minnie Nail Art”. Anyway I definitely did my pedicure as well but I decided to just draw an art on my big toe because I always wear shoes that cover up my toes recently. TAADAA~~

I think my hands and legs just fit out perfectly. If you girls like this design, show it to your manicurist and try it out! Oh, by the way, these are my real nails. I paint my hands with gel nail colors and my legs with normal nail colors.

IPhone Photography Apps

Hi! I would like to share some amazing photography apps with you guys in my blog and I think these apps are more suitable for ladies because it’s more on portrait edits. Previously I have wrote on the “Princess Cam” apps but I guess there are too much negative comments on it saying that I look hilarious on those fake lash. Therefore, I have explored on some other amazing apps that makes me looks more natural.

By the way, I am still using the “Princess Cam” apps but I don't use it for portrait edits anymore. I only use their stickers. I guess it’s not because their stickers is super cute but I guess because I have paid for that apps so I need to fully utilized it. Am I  right? ;p

Ok. Here is a picture I took with my Canon G11. Urm... I know it’s kind of out dated but it’s still working well for me.
And, here is a picture after my edits using my Iphone apps. 

 Could you all actually see the difference I made? Maybe a “YES” or maybe a “NO”. It’s ok. I have put two pictures side by side for you to make a comparison. Try to make a guess on what I have did to my picture.

Alright, guessing time is over. I’m going to open up my answers. I have make three edits using two apps in this picture. The first apps I use was definitely to make my skin looks smoother, therefore I use this “Camera360”. 

Select “Magic Skin” effect and use the “Natural” effect. I put an 8% touch up but you can put more depending on what effect you are expecting.
Another effect that I love in this app was the “Light Colour” effect and use “Sweet” effect. I put this to a 100% touch up. 
After the effect I made in “Camera360”, I use this app called 美人相机. For those who cannot read mandarin, try to change you language to Chinese and type this pin yin, “mei ren xiang ji”.  Make sure it looks like this.

Then click into “照片美化”.
 
 
Then choose the picture of your choice from your photo library and click the green button below.

For me, I have chosen the picture I have edited on “Camera360” which I did my first edit and followed by the second and third edit in this “美人相机” app.

When you are inside they will automatic change your picture to a super fair skin complexion which makes you looks awful, therefore you must click on this “” button. If you do not know how to read, search for this word.

Then click on the green heart button on your right and this 5 icon will pop out. 
  

Click on the first icon writing “彩妆”. I have indicated it as step 2 in the above picture. 

The second edit I did in my picture was to put on a blush with “彩妆”. I use to put on blush from “Princess Cam” but it’s really not as natural as this. After you click on “彩妆”, click on “腮红”and choose your most suitable blush colour.

The last edit I did was putting on a brown colour contact lens. Click onto “彩妆”, then click on “美瞳”and choose your most suitable contact lens colour.

After that, just click on the tick below and save your picture at the top right corner of your phone and your picture is done! =)

Never to miss out, “moreBeaute2” app was my all time favourite app. I love to edit my skin complexion with this app but my sister told me that my pictures look very fake and mainly because she say it doesn't looks like me anymore. Therefore, I decided to minimize my usage. I will show you a before after of using this apps. Let me see if you guys think that it’s over.

Shu Wen's Wedding Banquet


Hi! I am at Shu Wen’s wedding banquet! For those who don’t know her, she is my diploma mate. She invited me to a restaurant named Golden Hill at Kepong for her big day. I am really happy that I’m being invited.

This is our groom of the day and bride of the day!

You must be wondering where on earth I get this picture right? The groom ask me if I have seen their wedding album and I said “No, not yet”. Therefore, he brought the whole photo album and let me see. From there, I secretly snap this picture from the album because this is the shot I feel best of all.

Here is another one with heads up!

The food at Golden Hill restaurant was not bad. I enjoyed eating but there are still lots of left over’s as our table was not fully occupied. By the way, I must tell you that there is this surprise show done by the groom buddy. He was dancing “Gangnam” style on the stage and it was so damn funny. It makes me feel like dancing as well.

  I drank some red wine too!! But a glass won’t make me drunk. It will only turn my face into a tomato. LOL!!!  

With best of my heart, I wish them happy ever after.
